Cauliflower 101

Course Overview Cauliflower’s versatility in the kitchen has caught on for keeps, inspiring chefs everywhere to experiment with new ways of cooking it. Mild tasting and adaptable, it is positively irresistible when paired with bold, strong flavors, but it's equally appealing blitzed into “rice” to serve as a simple side dish. In this course, you'll learn how to prepare cauliflower for all sorts of applications, from simple roasted cauliflower and cauliflower rice to cauliflower "steaks," to a Parmesan-flavored flatbread topped with romesco sauce. You'll also learn to make a smooth and creamy cauliflower soup (with no cream at all) and crispy, tangy Buffalo cauliflower bites.
