Potato Gratins

Most of us have eaten, if not made, a classic (and delicious) potato gratin. A gratin refers to a browned, usually layered casserole that’s baked in the oven and has a crispy or crunchy top. Although this dish is frequently loaded with cream and gooey cheese that smother a base of starchy potatoes, it doesn’t have to be. In this course, we will visit the classic dish, but also introduce you to some less conventional but equally tasty versions. One of these will use olive oil in place of the cream and the other adds bright tomatoes for a fresh twist on this comforting dish that’s perfect for the holidays or any dinner you want to make special.
