"I did the Wilton cake decorating course last year and this was the recipe for Royal Icing we used. It dries hard and is great for writing and flowers that will keep for weeks if stored in an airtight,it means you can make these well in advance. Keep them away from strong light as any colours will fade. Keep equipment grease free, or you will end up with a soupy mess."

"Look to the cookie. These cake-style cookies are a staple in New York City. Growing up we used to buy these all the time and you can still get them in every bake-shop in the city. They were made famous to the rest of the world by an episode of Seinfeld entitled "The Dinner Party". They are more like small cakes than crunchy or chewy cookies, and should be roughly the size of the palm of your hand, if not, bigger. These are great for taking to a potluck, or if you've got a wayward New Yorker around."

"Grab your holiday cookie cutters and get busy on these wonderful cookies!!! The kids will enjoy making these cookies as much as they like eating them! YUM! Use your favorite icing, frosting, or glaze on them, then decorate or sprinkle some jimmy's or holiday sprinkles or candies on them! You can make these for any holiday party, but they are good anytime! ALSO: A trick I learned when doing sugar cookies, is to flour your cookie cutters if you notice the dough starting to stick to them when you are cutting them out. Just make sure you tap the cookie cutter after flouring, so you don't get too much on the cookies. ANOTHER TIP: When measuring flour, spoon tablespoonfuls into the measuring cup and DO NOT pack down. DO NOT scoop flour from the flour bag or container holding flour, as you don't get the right measurements, and your cookie dough will come out dry and crumbly. ( I got this tip for world famous baker, Nick Malgieri, at a cooking show in Chapel Hill NC a few years ago)"

"I came up with this brilliant idea to make cookies for all of our neighbors, family, and friends. I had four gluten free recipes, three from another gluten free blog and one from a gluten free cookbook. Two pounds of butter, four eggs, six cups of gluten free flour,eight hours, and one screaming baby later, I was completely ready to give up. The recipes were not working out the way I had envisioned! A couple of them tasted terrible, the other two either rose up too high or not at all. I went to bed thinking that cookies were just not going to happen this Christmas. But when I awoke the next morning, I realized that I could not give up. The world needs cookies! Heck, it's Christmas. Santa needs cookies! I recalled a childhood memory with my Great Grandma Dorothy, watching her make delicious sugar cookies, and how special it made me feel when I ate them. My kids, friends, and family deserved to feel that too. There are few things in this world that can make you feel more special than a gift of homemade cookies. I had to press on. When I started in the morning I didn't have much of a plan, but before I knew it I had mistakenly combined two of the recipes into one. Either by some divine miracle, complete dumb luck, or unknown brilliant skill, the dough turned out to be a nice consistency. The cookies followed and turned out amazing as well. I churned out batch after batch of little miracle sugar cookies. Some of them I smothered in chocolate and walnuts while the others were treated to double level jam filled bliss. Christmas was saved and my loved ones would not have to endure the depravity of a cookie-less holiday season. I had conquered and created a magnificent treat that is as delicious as it is gluten free. These can be enjoyed anytime of the year!"
