Cheesy Jalapeno Corn Casserole (Slow Cooker)

Description

"A yummy, easy and cheesy corn casserole served with a little heat! I typically add one whole large jalapeno, because I like it warmer!"

Ingredients

  • 8 ounces cream cheese, softened
  • 2 eggs, beaten
  • 1⁄2 cup sugar
  • 3⁄4 cup flour
  • 1⁄2 cup yellow cornmeal
  • 1⁄2 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1⁄2 teaspoon pepper
  • 15 ounces frozen corn
  • 14 3⁄4 ounces creamed corn
  • 1⁄2 jalapeno pepper, finely chopped
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 2 tablespoons butter, melted

Directions

  1. Spray interior of slow cooker with cooking spray.
  2. Mix together cream cheese, eggs and sugar.
  3. Combine flour, cornmeal, baking powder, salt, garlic powder and pepper, then add to cream cheese mixture.
  4. Add in the remaining ingredients, and mix well.
  5. Cook in slow cooker 3-4 hours on high.
